The craft

Eight steps,
one pot

Spices ground fresh, onions fried to bronze, saffron crumbled by the thread, and a dough seal that keeps the steam in. That is how a proper dum biryani is built.

See how it is made

Hands grinding cardamom, cloves, cinnamon and dried chillies in a brass mortar and pestle, spice dust in the air.
Crisp fried onions lifted from a brass pan on a slotted spoon, oil dripping back into the pan.
Fingers crumbling saffron threads over a steaming brass bowl of rice, saffron falling through steam.
A table spread at Osthir Flavours, a bowl of biryani, a bowl of creamy korma, spiced tea and mango lassi on brass trays with emerald linen.

The Table

The pours

A tall glass of chilled plain lassi, frothy on top, dusted with spice.

Our Story

Simple dishes are not
simple to make well
